Who is this for?

This practical culinary workshop is aimed at chefs at all levels; who are passionate about expanding their culinary repertoire and technical know-how of utilising typical leftovers to produce high-quality menu items.

Designed to provide practical inspiration to create menus by repurposing leftovers and leftover ingredients, you will have the opportunity to practice the creative process that goes into planning meals using scraps and get innovative ideas for contemporary menu items from surplus food, resulting in food waste reduction and saving money.
